Just like tequila and good music, I'm a firm believer that no Cinco de Mayo celebration is complete without grilled Mexican Street Corn. You basically just grill corn, smother it in a creamy goodness and sprinkle with cheese. Hello Heaven, nice to meet you.

Mexican Street Corn Recipe

Prep Time: 10 mins  |  Cook Time: 15 mins  |  Serves: 4

Ingredients + Tools:
  • 4 ears of regular sized corn cobs or 8 ears of mini corn cobs
  • ½ cup mayonnaise
  • 1½ cups sour cream
  • ¼ cup freshly chopped cilantro
  • 1 cup freshly grated Parmesan
  • 1 lime, juiced
  • Red chili powder, to taste
  • 2 limes cut into wedges, for garnish
  • Grill (or inside grill pan)
  • Tongs
Instructions:
  1. Remove the husks of the corn leaving the core attached. Grill the corn turning once on a hot grill or cast iron pan until it starts to get slightly charred. I over-charred mine because I like it that way, but you do you!
  2. In a small bowl mix the mayonnaise, sour cream and cilantro. Remove the corn cobs from the grill and *~*slather*~* them with the mayonnaise mix. Squeeze the lime juice over the corn and heavily season with parmesan. Sprinkle with chili powder and serve with a lime wedge.
